Serves: 1½ quarts
Ingredients
- 2 medium onions, minced
- 2 cloves garlic, mashed
- ¼ cup vegetable oil
- 2 cups ketchup
- 1 cup chili sauce
- ½ cup water
- 1 tsp horseradish
- 2 tsp yellow mustard
- ⅓ cup lemon juice
- ¼ cup vinegar
- ⅓ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- ⅛ tsp cayenne
Instructions
- Sauté onion and garlic in oil until soft, not brown. Add remaining ingredients and simmer for 45 minutes. Refrigerate.
- Prepare sauce a day ahead. Makes 1½ quarts.
- Use chicken quarters or pieces.
- Soak chicken 30 minutes in salted water. Season, fry in butter until golden brown. Cool and refrigerate until 2 hours before serving. Arrange in flat baking dish and pour sauce over chicken.
- Bake 1½ hours at 300 degrees.
