Make Coquito – A Classic Puerto Rican Holiday Drink – With this Recipe

With the Christmas countdown officially started, we’re here to bring you a holiday drink recipe that’s easy to make and is a Puerto Rican classic – Coquito! This tasty twist on the fundamental eggnog drink is a treat for your taste buds. Looking to make homemade gifts or to entertain? Consider making this easy-peasy Coquito recipe. First though, what is Coquito? This drink is often referred to as the eggnog of Puerto Rico. Coquito means “little coconut” in Spanish. It’s a coconut-based drink that’s creamily delicious and when spiked with rum it’s a winner. Let’s face it, the holiday season is brief, so add this to your drink line up in place of regular old eggnog and you’ll be kicking up your drink game to the next level of YUM! If you want a family friendly drink then simply leave out the rum! It’s still delicious.

Coquito Recipe

Ingredients:

  • Two egg yolks beaten
  • 1 12 oz. can evaporated milk
  • 1 14 oz. can cream of coconut
  • 1 14 oz. can sweetened condensed milk
  • 1/2 cup white rum
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves

Instructions:

  1. Combine the egg yolks and evaporated milk in the top of a double boiler and bring the water in the double boiler to a simmer. Cook over the simmering water, stirring constantly, until the mixture thickens or to 160 degrees (F) temperature.
  2. Pour mixture in a blender, then add the remaining ingredients: cream of coconut, sweetened condensed milk, water, rum, vanilla, cinnamon, cloves. Blend until well combined roughly 30 to 60 seconds.
  3. Pour into sterilized glass bottles. Chill for about 8 hours or overnight before serving.
  4. Store in an airtight container, refrigerated, for up to a month.

Mimosas & Mistletoe – A Drink Recipe for Christmas Brunch

Who wouldn’t like a celebration in every sip on a holiday like Christmas? For a show stopping brunch drink on Christmas day make this elegant Christmas Mimosa for your guests. Many hosts fall back on the traditional orange juice Mimosa, but there’s a lot more to Mimosa’s than just Champagne and OJ. This Cranberry Mimosa recipe is a refreshing holiday drink and is a nice alternative to the traditional Mimosa. It’s crisp red color fits right in with a Christmas color palette.

Christmas Cranberry Mimosa Recipe

Ingredients:

  • 2 ounces cranberry juice
  • 4 ounces Champagne
  • A splash of orange liqueur
  • 1 spring of fresh rosemary
  • 2 or 3 (or more) sugared cranberries – find the recipe here

Directions:

Pour cranberry juice into a Champagne flute and top with Champagne. Add just a splash of orange liqueur and drop in a few sugared cranberries. If you like garnish, try a sprig of rosemary. You can use sparkling wine like Prosecco in place of Champagne if you prefer. Some people say to pour a Spanish Cava claiming it’s even more refreshing and crisp.

Garnish with Rosemary Sprigs

Green Rosemary springs are a perfect accompaniment to this red Mimosa. The needles have a fragrant woodsy, evergreen, garden fresh smell. To prepare the Rosemary, wash it in cold water and rub it gently between your hands to loosen any dirt. Pat dry on a paper towel and trim with kitchen shears into individual sprigs. It’s not really a garnish you’d want to eat, but its variegated green needles look festive against the red cranberries.

Add a Sugar Rim to the Glass

The trick to adding sugar to the rim of the glass is to work quickly while rimming. To ensure the best results, prepare your glasses and all of the tools and ingredients you need before you begin. Pour a small amount of orange liqueur into a small dish and have sugar ready on a small tray or plate. First, dip the top of the glass in the orange liqueur. Next, roll the rim of the glass in the sugar. The deeper the liqueur and sugar the thicker the sugared rim on the glass. I like to refrigerate the glasses until it’s time to serve up the Mimosas.

Simply Sensational Apple Cider Recipe

Apple harvest started last month in our state of Washington. For generations Washington has been looked to as the source for the best apples in the world. Along with our well-known Seattle snobbishness about coffee, we’re also apple connoisseurs. This favorite cider recipe doubles down on apple flavor with a little bit of sumpin’, sumpin’ for those of you who love fun flavor and a bit of a kick in the taster.

What You’ll Need to Make Cider

If you don’t want to go to the hassle of buying the equipment traditional cider recipes call for like a cider press, apple grinder, a peeler/corer and so forth then you’ll find this recipe right up your alley. All you need is a slow cooker, cheesecloth, and a fine strainer.

As for what apples to buy to make cider; according to Cider Culture, “Galas, Gravensteins, Newtown Pippins, Rome Beauties, and Winesaps are a few common apple varieties that can add amazing nuances and depth to cider.” 

How to Make Slow Cooker Apple Cider

INGREDIENTS

  • 1 dozen apples, use any tart variety you like
  • 2 large oranges
  • 1 lemon
  • 4 cinnamon sticks
  • 3 teaspoons whole cloves
  • 2 teaspoons vanilla extract
  • ½ cup brown sugar
  • ½ cup white sugar

DIRECTIONS for Making Slow Cooker Cider

  • Wash your apples thoroughly, then slice them removing stems before adding to the slow cooker. Peel and quarter the oranges and lemon. Drop the pieces into the slow cooker with the apple slices. Add cinnamon sticks and cloves.
  • Fill the cooker with water. Cover and cook on low all day or even overnight. Keep cooking until the apple slices are tender.
  • Mash the ingredients in the cooker and continue to cook another one to two hours.
  • Cover a large pot with cheesecloth then carefully and slowly pour the apple mixture in. Repeat the process several times as needed to catch any large pieces.
  • Strain one more time with a fine mesh strainer to eliminate smaller pieces. Repeat until the cider is smooth.
  • Add vanilla extract and sugars while the cider is warm. Stir.

Poppy Seed Bread

INGREDIENTS:

  • 1/2 lb butter or margarine
  • 1 1/2 cups sugar
  • 4 beaten egg yolks
  • 1 – 2 oz pkg poppy seeds
  • 1 tsp. baking soda
  • 1 cup sour cream
  • 2 cups sifted flour
  • 2 tsp. vanilla
  • 4 stiffly beaten egg whites

INSTRUCTIONS:

Cream butter and sugar.  Add beaten egg yolks to which poppy seeds have been added.  Beat well.  Add baking soda to sour cream and add to mixture.  Add flour and vanilla, beat well.  Fold in egg whites.

Generously butter 3 small loaf pans.  Bake at 350 degrees for about 40 minutes.

Hot Spiced Cider Punch

INGREDIENTS:

  • 1 orange, sliced
  • whole cloves
  • 2 quarts cider
  • 2 – 7oz bottles 7up
  • 2 cups orange juice
  • 1/4 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 1 tsp. cinnamon
  • 1/2 tsp. allspice
  • 1/4 cup brown sugar
  • 24 whole sticks cinnamon

INSTRUCTIONS:

Stud orange slices with whole cloves, save for garnish.  Combine cider, 7up, orange juice, spices and brown sugar in a 4 quart sauce pan.  Heat, stirring constantly, until piping hot.  Slowly pour hot cider into a metal punch bowl.  Float orange slices on top.  Use cinnamon sticks as swizzle sticks.

Yields 24 servings
