Homemade Garlic Dill Pickles

INGREDIENTS

  • 2-3 pickling cucumbers
  • 5 sprigs fresh dill
  • 2-4 cloves of garlic, crushed and minced
  • 3 Tbsp white vinegar
  • 1 Tbsp salt
  • water

INSTRUCTIONS

Cut pickles into discs, spears, or sandwich slices and add to the jar with all ingredients except the water. Once everything is in the jar, fill to the very top with water and screw lid on very tightly. Shake the jar up to distribute flavors and leave on your countertop for 12 hours. Shake again and turn upside down for another 12 hours, making sure the lid is screwed on tightly to avoid leakage. Store in refrigerator and enjoy within a month for maximum freshness.

Homemade BBQ Sauce

INGREDIENTS

  • 1 cup chopped onion
  • 1/4 cup salad oil
  • 1 8oz can tomato sauce
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1/4 cup lemon juice
  • 3 Tbsp Worcestershire sauce
  • 2 Tbsp mustard
  • 2 tsp salt
  • 1/4 tsp pepper

BBQ Sauce

INSTRUCTIONS

Cook onion in hot oil until tender.  Add remaining ingredients.  Simmer uncovered 15 minutes.

Use to baste ribs or other meats to BBQ.

Quick and Easy Raspberry Jam

INGREDIENTS

  • 2 pounds fresh raspberries
  • 1 1/3 cups sugar
  • 4 T instant pectin

INSTRUCTIONS

Give raspberries a quick wash and then crush one layer at a time in a large bowl or puree in a blender and set aside.

In a separate bowl, stir the sugar and pectin together. Slowly add fruit and whisk together for 3 minutes until all the ingredients are incorporated.

Pour raspberry jam mixture in to freezable containers making sure to leave at least 1/2 inch head space to allow for the liquid to expand once in the freezer. Let jam stand 30 minutes before placing containers in the freezer.

This recipe makes 8 cups of raspberry freezer jam.

Tangy Sauce for Salmon

INGREDIENTS

  • 1/4 lb butter or margarine
  • 4 Tbsp soy sauce
  • 3 Tbsp ketchup
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp mustard
  • 1 clove garlic

INSTRUCTIONS

Heat all ingredients together in a sauce pan.  Serve as a sauce for salmon or use the sauce to baste salmon while baking or grilling.  Easy and delicious.  Serves 3-4.

Orange-Soy Marinade

INGREDIENTS

  • 3/4 cup orange juice
  • 1/2 cup teriyaki sauce
  • 3/4 cup soy sauce
  • 2 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 2 Tbsp fresh parsley, chopped
  • 1 Tbsp fresh basil, chopped

INSTRUCTIONS

In a medium bowl, combine orange juice, teriyaki sauce, soy sauce, garlic powder, parsley and basil.  Cover and refrigerate.
